The Washington grapes that Pacific Rim chooses for their Sweet Riesling are picked riper than the grapes for their Dry Riesling. They use a small amount of yeast to encourage the fermentation to stick – or keep it from becoming completely dry. They ferment at low temperatures in stainless steel tanks.
Like the Dry Riesling, this is another no oak, no malolactic wine. To stop the fermentation, Pacific Rim uses their centrifuge, which separates the yeast and the wine - this concludes the fermentation. They leave a good amount of carbon dioxide in the wine to create a lively feeling to the wine – although it's not spritzy.
Lively, fresh, and light, with an abundance of young riesling character and a nice lemony bite on the palate. A perfect sipping wine for springtime afternoons.
This semi-sweet Riesling is bursting with complex floral notes of jasmine and hibiscus on the nose, and a palate of citrus, dried apricot and lychee. Balanced and zesty, it is great on its own or paired with spicy Asian dishes. This perennial customer favorite sells out fast!

Harvested from grapes grown in Monterey County, Robert Mondavi Private Selection Johannisberg Riesling has the intense aromas characteristic of this varietal. This Riesling is produced from individually selected overripe grapes resulting in a full bodied, luscious wine with hints of apricot, nectarine and honey. The intense flavors and lingering finish complements a variety of cheeses, fruits, richly seasoned foods and desserts.
This fully-ripened Riesling has highly extracted fruit flavors of apricots and peaches coupled with enough acidity to give it a firm and juicy mouth feel. Excellent by itself or to complement soft or blue vein cheeses, richer style food with sauces and oriental dishes.
