This Estate Grown Cabernet Sauvignon is a full-bodied wine that is nicely layered with a velvet structure, round tannins, dense texture, and a lingering finish. The aroma is concentrated with ripe raspberry, black cherry and toasted oak followed by vanilla, mocha and hints of spice. The flavors are rich with blackberry, currant, dark chocolate and a savory component of roasted coffee and smoked meat.

While the deep plum/ruby/garnet-tinged 2003 Shiraz Command is slightly less nuanced than the 2002, it is just as powerful and full-bodied, offering copious quantities of fruit, glycerin, tannin, and muscle. This chewy, rich offering appears to be on a faster evolutionary track than its 2002 counterpart. Give it another 2-3 years of bottle age, and consume it over the following 12-15.

Grape Varieties: 100% Aglianico di Taurasi, harvested in part from century-old pre-phylloxera vines. Vinification: Manual harvesting starts in mid-October and lasts until early November. After pressing, a long maceration on the skins takes place. Once malolactic fermentation is completed, the wine is aged for 14 months in new French oak barrels prior to release.
Intense, persistent bouquet of rich wild cherries, toasted oak and warm vanilla. Soft, dense and well-balanced. The finish is long and pleasant, with flavors of red berries against a smooth background of toast and spice.

Beautifully crafted, with gorgeous fruit that's ripe, rich and vivid, centered around currant, black cherry and blackberry flavors, picking up traces of anise, cedar, mineral and sage.
