The Baron Herzog Cabernet Sauvignon was fermented in stainless steel and then aged for 10 months in French Oak. It was filtered only lightly at bottling.
This is a very approachable Cabernet Sauvignon with berry and plum notes finishing with fruity blackberry and spice flavors. It is light in the mouth with food-friendly acidity and tannin and hints of sweet French oak on the finish.
Intensely aromatic and flavorful wine featuring citrus, tropical notes of fresh pineapple and mango, creme brulee, brown spice and butterscotch that come together for a seamlessly long, plush finish.
The newest wine, Pluribus, will give just about any vineyard on Spring Mountain a run for its money. The 2004 Pluribus has a dense purple color and an elegant, sweet nose of creme de cassis intermixed with some camphor, graphite, and a hint of blueberry (or is it very ripe raspberries?). Quite opulent, full-bodied, but with good underlying acidity, this wine is fresh and remarkably light on its feet for a wine of such enormous intensity and richness.
Supple, elegant and polished, delivering ripe, fleshy plum, black cherry, mineral, spice and light cedary oak flavors that are well-proportioned, gaining length. Drink now through 2011.
